Dark Chocolate Bran Muffins

If you are gluten free, you can make these muffins with almond flour instead of bran. I love the insoluble fiber of the bran that keeps me regular!

Ingredients:

  • 2 cups wheat bran

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

  • 1/4 cup cacao powder

  • 3 eggs

  • 1/2 cup greek yoghurt

  • 2 tsp vanilla extract

  • 1/2 cup unsweetened apple sauce (optional)

  • 1/2 cup filtered water

  • 1 T ghee, melted

  • 1 dropper of dark chocolate stevia (or 2 T allulose or monk fruit)

  • 1 3oz dark chocolate bar, chopped

Here’s How:

  1. Preheat oven to 350 and grease muffin tin or put in muffin liners in each slot.

  2. Mix wet ingredients in 1 bowl (melt ghee and add to wet ingredients) and dry ingredients in the other.

  3. Chop chocolate bar. Add 1/2 of it to muffin mix and blend.

  4. Combine wet and dry and spoon into the muffin tin.

  5. Sprinkle with remaining chopped chocolate and bake for approximately 15 minutes.

  6. Cool on a muffin rack.

  7. Enjoy!
