Chicken Legs or Thighs, Braised

Ingredients:

  • 5 chicken legs or thighs, seasoned with salt and pepper and set aside

  • 1-2 shallots, chopped

  • 3-4 garlic cloves, chopped

  • 1 2” piece of ginger, chopped

  • 3 T rice vinegar

  • 2 T fish sauce

  • 1/2 cup granulated sweetener, (allulose, monk fruit, brown sugar-I used allulose and 1 T brown sugar)

  • 1/2 cup filtered water

  • 2 tsp hot sauce or 1 jalapeño, seeded and sliced

  • 1 T ghee or avocado oil for sautéing

Here’s How:

  1. Heat a large heavy skillet and place seasoned chicken in to brown both sides. Then, set aside.

  2. Chop shallot, garlic and ginger and in same skillet, add fat and saute for 2 minutes.

  3. Mix liquids, hot sauce and sweetener and add to veggies. (Add jalapeños if using) Then place chicken back in pan and cook about 8-10 minutes on each side, basting every few minutes. Sauce will thicken a bit.

  4. Garnish with a sprig of Rosemary, serve with a nice salad or cooked veggie and'/or with a grain of your choice.

    The flavor is light, clean with a touch of sweet but mostly savory!
