Pumpkin Seed Pate

This recipe is more like a pate than a dip.

Ingredients:

  • 1 cup raw pumpkin seeds

  • 1/3 cup raw shallots

  • 1/4 cup fresh parsley

  • 1/4 cup fresh cilantro (optional)

  • 2-3 garlic cloves

  • 1 jalapeno seeds removed or 1 1/2 tsp Aardvark Habanero sauce or hot sauce of your choice)

  • 2 T fresh lime juice

  • 2 T olive oil

  • 1/4 tsp fresh orange rind

  • salt and pepper to taste

Here’s How:

  1. Roast pumpkin seeds at 350 on a baking sheet for approximately 7 minutes.

  2. Place shallots, garlic and greens in a food processor and pulse until well blended.

  3. Add cooled pumpkin seeds and pulse.

  4. Add remaining ingredients and pulse.

  5. Season with salt and pepper.

Serve this pate with veggies, crackers or bread. Delicious as an accompaniment to soup and salad.
