Chocolate Almond Butter Bars

Ingredients:

  • 1 cup almond butter (organic, salted)

  • 1/3 cup granulated organic sugar of your choice (sugar cane, coconut, monk fruit) although probably use 1/2 cup as monk fruit is not as sweet)

  • 1/4 cup cold water

  • 1 tsp vanilla extract

  • 1/4 teaspoon cinnamon

  • 1 1/2 dark chocolate bar (72 or higher) bar ( 5 oz total) melted

Here’s How:

You will need 1 candy thermometer and 3 small heavy saucepans ( one should be a double boiler)

  1. Line a small pyrex dish with parchment paper or plastic wrap hanging over the edge, approximately 9/5″ bread pan.

  2. Place chocolate in double boiler and melt.

  3. Place monk fruit and water in a heavy saucepan, and heat to 248 Fahrenheit. Stir only till beginning to boil.

  4. While sugar mixture is heating, place nut butter in another sauce pan and warm.

  5. Mix together almond butter, cinnamon, vanilla and sugar mixture and blend quickly with electric mixer. Blend till just beginning to look a bit grainy.

  6. Spread 1/2 of the melted chocolate on parchment and chill in fridge for 5 minutes.

  7. Spread the nut butter mixture on top of the chocolate and even it out with a spatula. Chill for 10 minutes.

  8. Spread the remaining chocolate on top of nut butter.

  9. Cover, cool to room temperature and chill in fridge.

  10. Cut into small squares to eat.
