Cornbread, Gluten Free

Ingredients:

  • 1 1/4 cups corn flour

  • 3/4 cup gluten free flour, almond flour, coconut flour, brown rice flour (any combination)

  • 2 tsp baking powder

  • 3/4 tsp sea salt

  • 1 cup unsweetened almond milk

  • 1/3 cup coconut cream (optional)

  • 2 egg

  • 1-2 T real maple syrup

  • 1/4 cup ghee, avocado oil or coconut oil (softened)

  • 3 T sesame seeds

Here’s How:

  1. Preheat oven to 375.

  2. Grease a large cast iron skillet and heat in preheated oven for 5 minutes.

  3. Mix dry ingredients in a bowl except the sesame seeds.

  4. Mix wet ingredients in another bowl except the ghee or coconut oil. If using avocado oil, you can blend in with wet ingredients.

  5. Blend the ghee into the dry ingredients. Then, slowly add the wet to the dry.

  6. Remove hot skillet from oven, sprinkle sesame seeds evenly over the bottom of the skillet.

  7. Cover the seeds with the batter and bake cornbread for approximatley 25 minutes or until desired readiness.
