Pomegranate Kalamata Salsa
This is an interesting, tasty topping for salmon, halibut or even poultry. And so nutritious!
Ingredients:
1 cup finely chopped parsley
1/4 cup finely chopped fresh mint
1/4 cup roasted walnuts
1 1/2 T chopped shallots, red or green onions
1/3 cup fresh pomegranate
1/2 cup chopped kalamata or green olives
1-2 T fresh lemon juice
1-2 T extra virgin olive oil
salt and pepper to taste
Here’s How:
Chop all ingredients, mix in a bowl and chill.
Top salmon or other protein with a few scoops of Salsa.
