Pomegranate Kalamata Salsa

This is an interesting, tasty topping for salmon, halibut or even poultry. And so nutritious!

Ingredients:

  • 1 cup finely chopped parsley

  • 1/4 cup finely chopped fresh mint

  • 1/4 cup roasted walnuts

  • 1 1/2 T chopped shallots, red or green onions

  • 1/3 cup fresh pomegranate

  • 1/2 cup chopped kalamata or green olives

  • 1-2 T fresh lemon juice

  • 1-2 T extra virgin olive oil

  • salt and pepper to taste

Here’s How:

  1. Chop all ingredients, mix in a bowl and chill.

  2. Top salmon or other protein with a few scoops of Salsa.

  3. Yum!
