Raw Fruit Pie

Ingredients:

  • 1 1/2 cups coconut

  • 1 1/2 cups cashews or almonds

  • 1/2 cup pitted dates

  • 1 1/2 cups mango puree ( frozen chunks can be cooked down a bit and then placed in food processor)or apple butter

  • 2 tsp grated lime rind (if using mango puree)

  • 2 peaches, sliced thin (if using apple butter)

  • 2 cups blueberries or blackberries

  • 1 tsp cinnamon (in mango puree or apple butter)

  • a drizzle of honey

1. Combine coconut and nuts in food processor and pulse till crushed.

2. Add pitted dates and pulse till blended.

3. Press mixture into pie pan to form raw crust. Chill 30 minutes.

4. Spread mango puree or apple butter on top of crust, about 1" thick.

5. Arrange slice peaches and/or berries any way you prefer.

6. Chill pie before serving.

Tips:

  • Slice peaches thinly and fan from center of pie to edge. Place blueberries in between each section and all around periphery.

  • Top with fresh raspberries and/or any fresh berry you enjoy.
