German Pancake
This is a fun, nutritious meal - especially fun for kids, both little and big! Serve this fresh out of the oven as it's a visual treat to see it "puffed up"!Ingredients:
1/2 cup unbleached white flour
1 tsp sea salt
2 eggs
1 T unsalted butter
1/2 cup buttermilk, coconut milk, rice milk or cow's milk
1/2 lemon, juiced, in a small dish or drizzled over pancake fresh out of the oven.
1/8 cup sweetener, maple syrup, honey in a dish, or sprinkle pancake with powdered sugar
1. Preheat oven to 400 degrees.2. Place a small cast iron skillet on the stove top and melt the butter, then keep skillet warm until batter is ready to be poured into skillet.3. Use a blender or Vita Mix and blend 2 eggs for 1 minute.4. Add milk and blend, then add flour and sea salt and blend for another minute.5. Pour mixture into skillet. Place in oven and set a timer for 15-20 minutes. Pancake will puff up and turn slightly golden when ready. Remove with spatula and place on dish.6. Either drizzle lemon juice over pancake, then sprinkle powdered sugar and serve, or serve plain with small dishes of sweetener and lemon juice for dipping.
