Egg and Broccoli Muffins

This is a frittata in muffin tins which makes it so practical to take to work or on a road trip!

Yield: 12 muffins

Ingredients:

  • 10-12 eggs

  • 1/4 cup water

  • 2 cloves of garlic and 1/4 medium onion sautéed (optional)

  • 1 cup slightly sautéed broccoli (or leafy cooked greens)

  • 3 slices turkey bacon, crispy (optional)

  • 1/3 cup sheep’s milk feta, goat cheese or parmesan (optional)

  • salt and pepper to taste

  • add herbs and spices of your choice; paprika, chili powder, cumin, oregano, chives, rosemary, etc.

Here's How:

  1. Preheat oven to 400.

  2. Cook bacon for 15 minutes or until crispy. When cool, crumble.

  3. When done, turn down oven to 350.

  4. Saute onion, then garlic and add broccoli and cook al dente.

  5. Whisk eggs and water together, add salt and pepper and rest of the ingredients.

  6. Bake in greased muffin tins at 350 for 15-20 minutes or until egg completely cooked.
