Almond Butter Flourless Cookies

Ingredients:

  • 1 cup almond butter or can use peanut butter

  • 1 cup coconut sugar or 1/2 coconut sugar, 1/2 monk fruit sweetener

  • 1 egg

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • Sprinkle with flaked sea salt

Here’s How:

  1. Preheat oven to 350 and grease a cookie sheet or line it with parchment and set aside.

  2. Mix all ingredients together and chill for 15 minutes.

  3. Form into balls approximately 1 1/2 “ in diameter and spread out on the baking sheet.

  4. Sprinkle with flaked sea salt. (optional)

  5. Bake for approximately 10 minutes and cool on a wire rack before eating.
