Chocolate Covered Date Squares
Ingredients:
1 1/2 cups dates
1/3 cup nuts or seeds, roasted
1 T coconut oil or ghee or combination
1/4 tsp sea salt
1/3 cup cocoa powder
1 tsp cinnamon
1/3 cup coconut oil or ghee or combination
1/4 cup maple syrup
Pinch of flake sea salt on top of each square
Here’s How:
Roast nuts or seeds, at 350 on a cookie sheet, till nicely toasted, around 7-10 minutes.
Place pitted dates in a food processor and using pulse option, mix until chopped.
Add rest of ingredients through the 1/4 tsp sea salt and pulse.
Place mixture on some parchment paper and press to about 3/4” thickness, folding the parchment over the top as you press. Use the paper to create straight edges.
Refrigerate for 30 minutes minimum.
Use a double boiler, melt and mix the fat, cocoa powder, cinnamon and sweetener.
Cut chilled date mixture into squares, of your preference, I like small ones as they are rich, and one by one, dip them in the chocolate mixture, turn with 2 forks and place on parchment paper and sprinkle with flake sea salt to eventually harden in the fridge.
You can serve with nuts and dried or fresh fruits.
