Gluten Free Pumpkin Seed Bread
Ingredients:
2 cups almond flour
1/4 cup ground flax seeds
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1/4 cup pumpkin seeds, lightly roasted
5 eggs, 2 egg whites, 3 eggs (room temperature)
1 T real maple syrup
1 T apple cider vinegar
5 T melted ghee, coconut oil, avocado oil or olive oil in any combination
Here ‘s How:
Preheat oven to 350.
Mix dry ingredients in a bowl and set aside. (except pumpkin seeds)
Place eggs, maple syrup and vinegar in a bowl. Add fat and then mix into dry ingredients.
Place in a loaf pan either greased or with parchment paper.
Sprinkle pumpkin seeds on top.
Bake for approximately 15-20 minutes or until done.
Let cool, slice, toast and enjoy!
