Gluten Free Pumpkin Seed Bread

Ingredients:

  • 2 cups almond flour

  • 1/4 cup ground flax seeds

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp sea salt

  • 1/4 cup pumpkin seeds, lightly roasted

  • 5 eggs, 2 egg whites, 3 eggs (room temperature)

  • 1 T real maple syrup

  • 1 T apple cider vinegar

  • 5 T melted ghee, coconut oil, avocado oil or olive oil in any combination

Here ‘s How:

  1. Preheat oven to 350.

  2. Mix dry ingredients in a bowl and set aside. (except pumpkin seeds)

  3. Place eggs, maple syrup and vinegar in a bowl. Add fat and then mix into dry ingredients.

  4. Place in a loaf pan either greased or with parchment paper.

  5. Sprinkle pumpkin seeds on top.

  6. Bake for approximately 15-20 minutes or until done.

  7. Let cool, slice, toast and enjoy!
