Elderberry Chutney
Here’s another option for fresh elderberries (see elderberry syrup) Elderberries build the immune system, reduce inflammation, help with the common cold and constipation, to name a few. They need to be cooked or soaked before eating.
Ingredients:
3-4 cups fresh elderberries (stems removed)
1/2 tsp sea salt
1/2 tsp cinnamon
1 T fresh chopped ginger
freshly grated nutmeg
1/2 tsp mustard seeds
!/2 cup apple cider vinegar (or combination of vinegars)
1 small apple or pear chopped finely
2-3 T sweetener ( I used 1 T sucanat, 2 T monk fruit)
Here’s How:
After cleaning berries, place in a sauce pan with onion, spices and vinegar and cook slowly for 45 minutes or until thickens.
Meanwhile chop apple or pear finely and add to berry mixture with sweetener and cook another 5-10 minutes more.
Place in tiny jars for gifts or a pint jar and either seal and store or place in the fridge.
Enjoy with protein such as fish, chicken, sausage or instead of a PB and J, substitute elderberry chutney for the jam.
