Chocolate Cherry Bars
Ingredients:
3 oz 70% or 85% dark chocolate
1/3 cup pistachios, roasted
1/3 cup almonds, roasted
1 cup pitted medjool dates
1/8 tsp sea salt
1/2 tsp vanilla extract
1/3 cup dried cherries
1. Place a piece of wax paper in an 8x8" pan. The paper should drape over edges at least 2".
2. Put chocolate in double boiler and melt.
3. Place roasted nuts in food processor and pulse only 3-4 times.
4. Add dates and pulse another 3-4 times.
5. Add everything but the cherries and pulse until mixture could stick together and is evenly chopped.
6. Add cherries and coarsely chop.
7. Place mixture on wax paper; with slightly moistened hands, press evenly into pan.
8. Cover with another piece of wax paper and chill, approximately one hour.
9. Cut into 16 squares, and store in airtight container with wax paper in between layers, or wrap in tinfoil.
Note: these bars freeze well if you want to save them.
