Grated Beet, Cabbage, and Carrot Salad with Lemon Dressing
Ingredients:
1 beet
3-4 carrots, depending upon size
1/2 head of cabbage, if small, otherwise, 1/4, red or white
1 apple, grated (optional)
2-3 garlic cloves
juice of 2 lemons
1/4 cup olive oil
1/8 cup chopped parsley for garnish
salt and pepper to taste
Here’s How:
Use a food processor and with the slicer blade, cut all the cabbage. You may need to hand slice the larger pieces. The slicer works much better than the grater for shredding cabbage. Place in a large bowl.
Use the grater blade to cut the beets and carrots and apple and add to the cabbage.
Mix the dressing and pour over veggies. It gets better as it marinates.
