Stuffed Crimini Mushrooms

  1. Ingredients:

  • 1 lb raw bulk Italian chicken sausage

  • 20 crimini mushrooms, stems removed and saved

  • 1 small onion chopped fine

  • 1/3 cup chopped parsley

  • 1/3 cup grated parmesan

  • Salt and Pepper to taste

  • 1-2 T other fresh herbs (basil, oregano, thyme)

Here’s How:

  1. Remove stems from caps and chop finely.

  2. Saute onion for 5 minutes, add mushroom stems, salt and pepper and chopped parsley.

  3. Bake buttons with a touch of olive oil for 10 minutes.

  4. Mix raw sausage with cooked veggies, herbs and cheese and spoon into mushrooms, molding into meatballs on top of mushroom

  5. Bake at 350 for 30-40 minutes.

  6. Serve right away as an appetizer or part of a meal.
