Green Chicken Salad

This recipe is a great way to use leftover chicken and add lots of greens to enhance the nutritional value. You can use a variety of greens and if you don’t have apples, you can leave it out or substitute pear, dried apricot or even puffed chopped strawberries. Have fun with it!

Ingredients:

  • 2-3 cups chopped cooked chicken

  • 2-3 stalks of celery, chopped fine

  • 1-1 1/2 cups chopped laminate kale

  • 1/2 cup chopped Italian parsley

  • 1 cup chopped apple

  • 3-4 T lemon preserved salad dressing

  • Salt and pepper to taste

  • sprinkle with other herbs and spices of your choice (garlic granules, onion salt, umami, red pepper, paprika)

Here’s How:

  1. Chop all ingredients, mix together.

  2. Add dressing and seasonings to taste.

  3. Chill and serve.
