Hazelnut Truffles, Vegan

Ingredients:

  • 6 oz dark chocolate

  • 1/2 cup coconut cream (https://healthytraditions.com/products/1-pint-16-oz-coconut-cream-concentrate-1?_pos=2&_sid=d6acb0d91&_ss=r)

  • 1 cup hazelnut or almond butter

  • 2 t real maple syrup

  • 1 1/2 tsp ground cinnamon

  • 1 tsp vanilla extract

  • 1 cup roasted hazelnuts, chopped

  • 1/2 tsp flaked salt (optional)

  • 30 whole hazelnuts roastd

Here’s How:

  1. Preheat oven to 350.

  2. Roast hazelnuts separately for 8 minutes.

  3. In a double boiler, melt dark chocolate and coconut cream. Then blend in nut butter and maple syrup.

  4. Remove from heat and add vanilla extract and cinnamon.

  5. Allow mixture to cool and then chill for at least 3-4 hours.

  6. Take approximately 2 tsp of mixture and flatten in your palm, add 1 whole hazelnut and create a ball around it.

  7. Dip and roll in the chopped nuts and flaked salt and chill. Repeat for all the truffles

  8. Can store in freezer as well.
