Live Nuts

  • 4 cups raw nuts (almonds, walnuts, pecans)
  • 1 heaping T sea salt
  1. Place nuts and salt in a large bowl and cover with filtered water, making sure the water is several inches above the nuts.
  2. Leave on the kitchen counter overnight.
  3. Drain in a colander and place on a cookie sheet.
  4. Your oven temperature needs to be below 150. Most ovens lowest temperatures are 170. If this is the case for you, you can try to turn the oven light on, place the nuts in the oven and keep the oven door shut for at least 24 hours. If you have an oven warmer, you may try the lowest temperature on that and keep nuts in there for about 8 hours.
  5. The nuts are done when they are completely dry and crisp.

Eat these nuts as a snack or sprinkle on salads. These nuts contain enzymes from sprouting due to soaking and then being baked at such a low temperature, and they are delicious! Live nuts are a unique Thrifty, healthy, holiday gift as well.
