Mango Rasberry Sorbet
This frozen treat is easy to prepare, cooling on a hot summer eve, and filled with anti-oxidants! This recipe takes less than 5 minutes to prepare and yields 3 - 4 servings, 1/2 cup each.
Ingredients:
1 cup frozen mango chunks
1 cup frozen raspberries
3 T nonfat Greek yoghurt or 3 T coconut or almond milk for nondairy version
2 tsp vanilla extract
2 T monk fruit or allulose
Place frozen fruit in food processor and mix till frozen creamy (30 seconds max). Add yoghurt, vanilla, sweetener and tap pulse on and off for approx. 15 seconds. Transfer to small serving cups and enjoy, or freeze for later.
Tip: Frozen blueberries and bananas is also a delicious combination. One T sweetener is enough for this combo due tot he sweetness of the banana.
