Nina's Chicken Salad

Here's a  recipe when you have roasted a chicken and you want to do something easy and tasty with the leftovers.

    • 2 large chicken breasts, cooked (poached or baked)

    • 4 stalks celery

    • 1 carrot

    • 1 cup sugar snap peas and/or green beans

    • 1/3 cup red onion

    • 1/3 cup sliced red pepper

    • 1/3 cup dried plums, apricots, or cranberries

    • 1 T taco seasoning (Trader Joes' makes a nice one)

    • 2 tsp cumin

    • 1 tsp liquid smoke

    • 3 T mayonnaise

    • 1 T dijon mustard

    • 1 T Balsamic, raspberry or blueberry vinegar

    • 1 T fish sauce

    • 1/2 cup chopped parsley

    • 1/2 cup chopped roasted almonds, pecans or walnuts

    • 1/4 cup black sesame seeds

Here's How:

  1. Chop all ingredients to desired size.

  2. Mix everything together, except nuts and parsley.

  3. Chill.

  4. Just before serving, chop nuts , seeds and parsley and add to the mix.

  5. This chicken salad is great wrapped in romaine leaves as a lettuce wrap.
