Peanut Coconut Sauce
Ingredients:
- 1/2 cup peanut butter
- 2T fresh lime juice
- 1-2 cloves garlic, minced
- 1 tsp freshly minced ginger
- 2 tsp fish sauce (wheat free tamari or soy sauce for vegan and gluten free)
- 1/2-1 T chili paste with garlic
- 3 T coconut cream concentrate
- 2 T organic wheat free tamari or soy sauce for vegan and gluten free)
- 1 T coconut oil
- 1/3 cup water (or more if necessary)
Here's How:
- Blend all ingredients in blender until smooth, adding more water if necessary.
- Feel free to add or subtract any of the seasonings to align with your taste buds!
- Enjoy as a dip with vegetables, rice crackers or served over chicken, fish or rice noodles or other grain.
