Protein Bars-15 grams per bar

Ingredients:

  • 2 cups raw nuts: almonds, walnuts, pecans, or hazelnuts

  • 1/2 cup pumpkin seeds

  • 1/4 cup rolled oats

  • 1/4 cup oat bran

  • 1/4 cup dried fruit, including 3 medjool dates and any combination of tart cherries, cranberries, currants, apricots

  • 1/4 cup dark chocolate chips or chopped dark chocolate

  • 1 tsp sea salt or salt flakes

  • 1-2 tsp cinnamon

  • 1/4 cup allulose

  • 6 scoops of complete whey protein powder (Standard Process) 45 grams total protein

  • 1 cup almond butter, salted

  • 3 T extra virgin olive oil, coconut oil or ghee

  • 1 T local honey

  • 2 tsp vanilla extract

  • 1 large egg white

  • 1/4 cup water

Here’s How:

  1. Preheat oven to 350 and roast nuts on a cookie sheet for about 8 minutes. Remove and cool and roast pumpkin seeds for about 4-5 minutes.

  2. Mix wet ingredients in a bowl, egg white, vanilla, honey,, almond butter, melted fat or olive oil and set aside.

  3. Chop dried fruits and mix in with cooled nuts. Add chocolate.

  4. Mix nut mixture and rest of dry ingredients and then add wet ingredients until blended.

  5. Press into a 9/13 pyrex dish.

  6. Bake at 350 for 15-20 minutes.

  7. Cut into squares or bars. Refrigerate in a glass sealed container before eating as they will solidify and become less crumbly.
