Red Lentils with Capers and Sun-dried Tomatoes
Ingredients:
- 1/2 medium onion chopped
- 1 T ghee or avocado oil
- 2-3 garlic cloves, chopped
- 2 cups red lentils
- 1 1/2 cups chicken, veggie broth or water
- 1/2 cup white wine
- 1/2 cup chopped sun-dried tomatoes
- 1/4 cup capers
- salt and pepper to taste
Here's How:
- Heat skillet, add fat, and saute onion until slightly browned.
- Add garlic and saute.
- Add broth, lentils and rest of ingredients and cook for 20 minutes or until done.
