Savory Turkey Muffins
These muffins are great to make ahead and take to work for lunch or pack them in your kids lunches!Ingredients:
- 1 lb ground turkey*
- 3-4 eggs
- 2 cups kale
- 1/3 onion
- 3 garlic cloves
- 1/2 tsp sea salt
- 3-4 fresh basil leaves (optional)
- 1 T taco seasoning or any seasonings of your choice and adjust to taste
- 1/2 tsp cumin (optional)
- 1/3 cup parmesan cheese, grated on top, after 20 min in the oven (optional)
Here's How:
- Preheat oven to 350
- Place everything in food processor but eggs and turkey and pulse till chopped.
- Add eggs and turkey and slightly pulse just till mixed.
- Grease muffin tins and spoon mixture evenly into tin.
- Bake for 30-45 minutes. After 20-25 minutes, you can sprinkle parmesan on each muffin.
*If you prefer, you can cut the ground turkey in half and add more eggs (6) to make it more like a frittata muffin with turkey.This is a great dish for picnics or taking for lunch or starting your day for breakfast. You can add bits of chopped turkey bacon or regular, chopped olives, sun-dried tomatoes, etc. Allow your creative juices to flow.
