Spinach Arugula Pesto
Ingredients:
6 cups spinach
3 cups arugula
1/2 cup walnuts
2 garlic cloves
2 tsp grated lemon rind
2 T fresh lemon juice
1/4 cup grated parmesan
2-3 T nutritional yeast
1/2 tsp sea salt
fresh ground pepper
3 T extra virgin olive oil
Here's How:
Place walnuts, garlic and cheese in the food processor and blend.
Add several handfuls of greens at a time to blend.
Add remaining ingredients except olive oil which can be added slowly while processor is running.
Taste and adjust seasonings.
