Tahini Date Nut Bread
Ingredients:
1 flax egg (1 T ground flaxseed + 3 T filtered water) or 1 organic egg
1/2 cup tahini
1/3 cup coconut sugar or sweetener of your choice (allulose, monk fruit for 0 carbs)
3/4 cup unsweetened almond milk
2 cups total of combination of gluten free flours (1 cup almond flour, 1/2-3/4 cup gluten free flour, 1/2 or 1/4 coconut flour)
2 tsp baking soda
2 tsp cinnamon
1 1/2 cups chopped dates
3/4 cup walnuts (1/2 reserved for topping)
Here’s How:
Preheat oven to 350.
Line a loaf pan with parchment.
In a large bowl, whisk together flax egg (combine ground flax seeds and water and let sit for 5 minutes)
Add tahini, sweetener, milk and mix.
Sift in the dry ingredients through the cinnamon.
Fold in the dates and walnuts.
Spread batter into lined bread pan. top with remaining walnuts.
Bake for about 30 minutes. If it is needing more time, turn down to 325 and bake 5-10 minutes longer or until golden brown.
Cool on a rack before slicing.
