Mediterranean Meatballs
Ingredients for Meatballs:
1 lb of ground beef
1 lb of ground pork
2 eggs
2/3 cup finely grated parmesan
3/4 cups finely chopped yellow onions
7 garlic cloves, chopped
1/2 cup packed chopped parsley
1 tsp oregano
1/2 tsp ground cardamom
1/2 tsp red pepper
1/2 tsp ground cinnamon
salt and pepper to taste
Ingredients for Tomato Sauce:
1 cup finely chopped yellow onions, drain excess liquid by shaking in a colander
5 garlic cloves, chopped
2 T ghee or olive oil
1 28 oz can quality crushed tomatoes
1 16 oz jar of basil or garlic tomato sauce
1 T sweetener, organic sugar, molasses or maple syrup
2 bay leaves
1/2 tsp cinnamon
salt and pepper to taste
Here’s How:
Make the sauce first by using a large saucepan, heating the fat, adding the onions and cook until translucent. Add garlic and saute for 2 minutes.
Add the rest of ingredients and simmer.
Meanwhile, in a large bowl, place the beef and pork, mix gently until well combined.
Mix eggs separately, then add with parmesan and spices and mix very gently as overmixing can cause tough meatballs.
Form into balls the size of golf balls and place on a plate.
Heat 2 heavy skiilets, add ghee and brown each side. Once all the meatballs are browned, add them to the sauce, cook for about 15 minutes and enjoy or store for the next day.
