Butternut Squash Muffins

Ingredients:

  • 1 1/3 cups almond butter

  • 2/3 cups pureed butternut squash

  • 4 eggs

  • 2 T honey or maple syrup

  • 1 1/2 tsp real vanilla extract

  • 1 tsp baking soda

  • 1/8 tsp sea salt

  • 2 tsp ground cinnamon

  • 2/3 cup dark chocolate chips or chopped dark chocolate pieces

Here’s How:

  1. Preheat oven to 375 and either grease a muffin tin or use muffin liners.

  2. Use a food processor and blend all ingredients except the chocolate chips.

  3. Fold chips in at the end and distribute batter evenly into the dozen muffin tin.

  4. Bake for 10-15 minutes.

  5. Allow to cool on a rack.

  6. Store in fridge.
