Butternut Squash Muffins
Ingredients:
1 1/3 cups almond butter
2/3 cups pureed butternut squash
4 eggs
2 T honey or maple syrup
1 1/2 tsp real vanilla extract
1 tsp baking soda
1/8 tsp sea salt
2 tsp ground cinnamon
2/3 cup dark chocolate chips or chopped dark chocolate pieces
Here’s How:
Preheat oven to 375 and either grease a muffin tin or use muffin liners.
Use a food processor and blend all ingredients except the chocolate chips.
Fold chips in at the end and distribute batter evenly into the dozen muffin tin.
Bake for 10-15 minutes.
Allow to cool on a rack.
Store in fridge.
