Veggie Flat Bread with various toppings
Ingredients:
1 large beet (I like to use golden but anything works)
1/2 of a large cauliflower
1 tsp sea salt
1 cup almond flour
3 raw eggs
1 tsp grated lemon rind (optional)
1/4 cup chopped parsley (optional)
Here’s How:
Preheat oven to 350.
Using a food processor, pulse small chunks of beets until thoroughly blended.
Add smaller pieces of cauliflower with stem (not leaves) and blend into the beet.
Add remaining ingredients in order, pulse until completely blended.
Place mixture on a piece of parchment on a cookie sheet and spread with a spatula evenly.
Bake for 25-30 minutes until firm and lightly browned.
Cool on a rack.
Ingredients for Toppings:
Spreads that you enjoy: hummus, pesto, tahini sauce, green sauce from my tofu post, etc.
Sliced veggies, arugula, various proteins (turkey, chicken, sliced boiled eggs, feta or other cheese)
