Cabbage Pancakes

Serves 3-4

Ingredients:

  • 4-5 cups shredded cabbage

  • 1/2 small red onion thinly sliced

  • 4 green onions, sliced thin

  • 4 eggs

  • 1/2 tsp sea salt, fresh ground pepper

  • 1/4 cup garbanzo bean, cassava or almond flour

  • 1/2 tsp baking powder

  • 1 T ghee or avocado oil

  • 1/3 cup sliced mushrooms (optional)

Here’s How:

  1. In a food processor, use the grating blade, and grate the cabbage. Place in a bowl.

  2. Use the slicer blade next, and slice the red onion and add to the bowl.

  3. Slice the green onions. Add to the bowl.

  4. Whisk the eggs, add salt and pepper.

  5. Sprinkle cabbage mixture with flour and baking powder and thoroughly mix with hands.

  6. Heat skillet very hot, add ghee and place 1/4 to 1/3 of the mixture in the skillet and using a spatula, even it out.

  7. Cook on medium heat until browned on one side. Using a plate, after loosening the cooked side, flip it onto the plate and place back in the pan to brown the other side.

  8. Serve with a hot sauce or salsa of your choice or enjoy as it is!
