Cranberry Relish with Pomegranites

Ingredients:

  • 1 12oz bag of fresh organic cranberries

  • 1 orange

  • 1/3 cup xylitol or monk fruit sweetener

  • 1/3 cup organic sugar

  • 2/3 cup water

  • 1 1/2 tsp ground cinnamon and/or 1 stick fresh cinnamon

  • 2 T coconut, date or brown sugar

  • 1/4 cup red wine

  • 1 cup fresh pomegranites

  • Roasted chopped nuts of your choice (optional)

Here’s How:

  1. Place first 2 sugars and water in heavy saucepan and bring to boil while stirring.

  2. Add cranberries, and simmer for 20 minutes.

  3. Remove 1 1/2 T of orange rind from orange and add to cranberries.

  4. Add juice of 1/2 of orange, wine and brown sugar.

  5. Cook another 2-3 minutes, then add pomegranites for another 2 minutes.

  6. Mixture will thicken as it cools.

  7. Top with roasted nuts before serving.

  8. Delicious with turkey and other poultry, including Stuffed Portabello Mushrooms.
