Cranberry Relish with Pomegranites
Ingredients:
1 12oz bag of fresh organic cranberries
1 orange
1/3 cup xylitol or monk fruit sweetener
1/3 cup organic sugar
2/3 cup water
1 1/2 tsp ground cinnamon and/or 1 stick fresh cinnamon
2 T coconut, date or brown sugar
1/4 cup red wine
1 cup fresh pomegranites
Roasted chopped nuts of your choice (optional)
Here’s How:
Place first 2 sugars and water in heavy saucepan and bring to boil while stirring.
Add cranberries, and simmer for 20 minutes.
Remove 1 1/2 T of orange rind from orange and add to cranberries.
Add juice of 1/2 of orange, wine and brown sugar.
Cook another 2-3 minutes, then add pomegranites for another 2 minutes.
Mixture will thicken as it cools.
Top with roasted nuts before serving.
Delicious with turkey and other poultry, including Stuffed Portabello Mushrooms.
