Easy Zucchini Lasagna
Ingredients:
3 zucchini, sliced length wise
1 small can (6 oz) tomato paste
1/2 cup chopped olives of your choice
1/4 cup white wine
2 T olive oil
1/4 tsp crushed red pepper flakes
1 shallot, chopped
1 green onion, chopped
2-3 garlic cloves, chopped or pressed
1 large portobello mushroom chopped or 7-10 Crimini mushroom chopped
1 lb ground turkey or Italian chicken sausage
1/4 cup fresh chopped basil or parsley
1 1/2 cups shredded parmesan
How to make:
Preheat oven to 350.
Place zucchini slices on a greased cookie sheet, drizzle with olive oil and sprinkle with sea salt and bake approximately 10 minutes or until slightly underdone.
Mix tomato paste, olives, wine, olive oil and pepper in a bowl and set aside.
Saute onions and garlic, add mushrooms and set aside.
Saute ground meat until almost done and mix in onion mixture and set aside.
In a 9/13 baking dish, place 1 layer of zucchini (I use ends for the bottom layer), then spread the tomato mixture on zucchini, then the meat mixture, then cheese and do this 3 more times and on the top layer, before the cheese, sprinkle the fresh herbs and then the final sprinkling of cheese.
Bake in oven at 375 for 10-15 minutes.
