Chocolate Mini-Torte
Ingredients:
2 T ghee
1T cocoa powder
1/2 cup dark chocolate chips
1 organic egg
1 egg yolk
1 tsp vanilla extract
1 1/2 T coconut sugar or monk fruit
2 T almond or coconut flour
4 squares of dark chocolate
1/2 cup puffed strawberries or raspberries
1/2 cup plain greek yoghurt sweetened to your taste with monk fruit or stevia (optional)
Here’s How:
Preheat oven to 425.
Melt first 3 ingredients and set aside.
Add eggs and vanilla extract.
Mix in flour and sweetener.
Divide mixture into 3-4 ramekins that have been greased and for extra caution, place pre-cut parchment circles in the bottom of ramekin.
Place square of chocolate in center of each ramekin and press down.
Bake in oven for 5-7 minutes.
Let cool, remove from ramekin, and sprinkle chopped puffed berries on top. Dust with cocoa powder
Serve with a dollop of greek yoghurt if desired.
