Chocolate Mini-Torte

Ingredients:

  • 2 T ghee

  • 1T cocoa powder

  • 1/2 cup dark chocolate chips

  • 1 organic egg

  • 1 egg yolk

  • 1 tsp vanilla extract

  • 1 1/2 T coconut sugar or monk fruit

  • 2 T almond or coconut flour

  • 4 squares of dark chocolate

  • 1/2 cup puffed strawberries or raspberries

  • 1/2 cup plain greek yoghurt sweetened to your taste with monk fruit or stevia (optional)

Here’s How:

  1. Preheat oven to 425.

  2. Melt first 3 ingredients and set aside.

  3. Add eggs and vanilla extract.

  4. Mix in flour and sweetener.

  5. Divide mixture into 3-4 ramekins that have been greased and for extra caution, place pre-cut parchment circles in the bottom of ramekin.

  6. Place square of chocolate in center of each ramekin and press down.

  7. Bake in oven for 5-7 minutes.

  8. Let cool, remove from ramekin, and sprinkle chopped puffed berries on top. Dust with cocoa powder

  9. Serve with a dollop of greek yoghurt if desired.
