Cobb Salad

Ingredients for 4 people:

  • 2 bags of mixed organic lettuces (romaine is traditional) approximately 1 1/2 cups per person

  • 2 avocados cut into bite sized pieces and drizzled with fresh lime juice and a pinch of sea salt

  • 1 package (8 slices) of bacon or turkey bacon (crisped and cut into 1” pieces)

  • 1 cup cherry tomatoes, sliced with a serrated knife in halves or thirds (depending upon size)

  • 4 hard boiled eggs, quartered *

  • 1 cup of crimini mushrooms, sliced and sautéed with seasoning of your choice ( garlic, sea salt, pepper, oregano, parsley, etc)

  • 1 cup olives of your choice

  • 1/2 cup thinly sliced red onion (pickled ahead of time, at least 30 minutes)

  • 2 chicken breasts (boneless and skinless) sautéed or baked with seasonings and then sliced into bite sized pieces

  • 2/3 cup Balsamic Vinaigrette (see Nina’s Vinaigrette salad dressing)

  • 1/2 cup toasted pecans

* To make the perfect hard boiled egg: Boil water in a pot, when boiling, slowly add 1 egg at a time and cook for 8 minutes. Place pot under cold water faucet and let it run into pot, cooling the eggs. They peel easily and the white is totally cooked while the yoke is slightly moist and a beautiful orange color.

Here’s How:

  1. Place salad greens in a bowl and set aside.

  2. Prepare your ingredients and assemble on a lovely platter.

  3. Lightly dress greens and place remaining dressing in a pitcher.

  4. Encourage individuals to assemble their salads, starting with the greens and choosing whatever they like from the platter. Drizzle a bit more vinaigrette on top and finish with roasted pecans. Yum!
