Chocolate Berry Protein Bars

Ingredients:

  • 1/4 cup organic whey or pea protein powder

  • 1 cup organic quick cooking oats

  • 2 tablespoons ground flaxseed

  • 3 tablespoons cacao (or cocoa) powder

  • 1/4 cup chopped nuts (roasted tastes good)

  • 1/3 cup dried cherries (or any dried fruit)

  • 1/4 cup dark chocolate chips or chopped dark chocolate pieces

  • 1/2 cup almond butter

  • 1/4 cup honey

  • 5-6 tablespoons water

  • 1 teaspoon vanilla extract

Here’s How:

  1. Place first 7 ingredients in a bowl.

  2. In a separate small bowl, mix together the nut butter, honey, 5 T water and vanilla.

  3. Mix wet and dry and add the additional 1 T of water if needed.

  4. Place a piece of parchment paper in an 8”/8” pan and press the mixture into the pan. You may want to moisten your palm as you press the mixture evenly into the pan.

  5. Chill for an hour and cut into pieces.
