Matzah Brie

This easy, satisfying pancake like dish is a traditional Jewish treat, especially during Passover, although a great brunch dish, anytime.

Ingredients:

  • 3 matzah sheets

  • 3 eggs

  • 1 T fat that tolerates high heat (I like ghee, but avocado oil works, too)

  • 1/2 tsp sea salt

  • Fresh ground pepper to taste

Here’s How:

  1. Use a large colander and place inside a large bowl.

  2. Break up matzah into 2/2” squares and place in colander.

  3. Pour either boiling water or very hot water from the faucet over the matzah and let it soak for 3-4 minutes before draining thoroughly. Set aside.

  4. Use the big bowl used to soak the matzah and whisk 3 raw eggs into the bowl. Then add drained soggy matzah and mix.

  5. Season with salt and pepper.

  6. Use a large skillet and heat it very hot. Find a large plate that can fit over the skillet for flipping.

  7. Pour mixture into hot skillet and cook on medium high until bottom is browned and crisp.

  8. Place plate on top of skillet and carefully flip.

  9. Use a spatula to shimmy the pancake back in the skillet to brown the other side.

  10. Cut into pie shape pieces and enjoy on its own, or smothered in almond butter and maple syrup or jam. Can also melt some cheese on top for a more savory take!
