Protein Bar Low Carb

Ingredients:

  • 1 cup almond butter

  • 1/4 cup monk fruit granulated sweetener

  • 1/4 cup coconut oil

  • 1 cup slivered almonds

  • 1 cup pecans

  • 1/2 cup sunflower seeds

  • 2 tsp ground cinnamon

  • 1/4 tsp sea salt

  • 2 tsp vanilla extract

  • 1/2 cup shredded coconut, unsweetened

Here’s How:

  1. In a small saucepan, on low heat, mix almond butter, coconut oil and monk fruit sweetener until well blended. Remove from heat and add in spices and extract.

  2. If desired, roast pecans, almonds and sunflower seeds in separate sections on a cookie sheet at 350 for approximately 7 minutes. Let cool.

  3. Blend into almond butter mixture and spread into 8/8 baking dish that is lined with parchment paper.

  4. Bake at 350 for 15 minutes. Let cool, chill before cutting into bars, (otherwise they will crumble) whatever size you prefer.
