Pumpkin Protein Bar

Ingredients:

  • 1/2 cup almond butter

  • !/2 cup pumpkin puree

  • 1 oz cacao butter

  • 1-2 T granulated monk fruit (or 1 T maple syrup or honey)

  • 1 tsp vanilla extract

  • 1/2 cup vanilla pea protein powder

  • 1-2 Tsp cinnamon

  • 1/2 tsp pumpin spice (optional)

  • 1/8 tsp sea salt

  • 14 cup dark chocolate chips (optional)

Here’s How:

  1. Combine the first 5 ingredients until smooth.

  2. Add remaining ingredients and mix well. (Dough should be like play-dough.)

  3. Press into a loaf pan, lined with parchment paper.

  4. Chill in the fridge for at least 1 hour.

  5. Cut into portions of your choosing.

  6. Store in fridge or freezer (my preference) and enjoy!
