Pumpkin Seed Red Pepper Pesto
Pumpkin seeds are a good source of anti-oxidants, magnesium, zinc and unsaturated fats, all of which keep your heart healthy.
Ingredients:
2 garlic cloves
1 cup roasted pumpkin seeds
1 1/2 cup fresh basil
2/3 cup red pepper spread (Trader Joe’s) or 2/3 whole red pepper chopped
1 1/2 T granulated monk fruit sweetener
1 T chili sauce
Here’s How:
In a food processor, pulse garlic and pumpkin seeds.
Add Basil and pulse.
Add remaining ingredients and pulse till blended.
Chill and enjoy!
