Pumpkin Seed Red Pepper Pesto

Pumpkin seeds are a good source of anti-oxidants, magnesium, zinc and unsaturated fats, all of which keep your heart healthy.

Ingredients:

  • 2 garlic cloves

  • 1 cup roasted pumpkin seeds

  • 1 1/2 cup fresh basil

  • 2/3 cup red pepper spread (Trader Joe’s) or 2/3 whole red pepper chopped

  • 1 1/2 T granulated monk fruit sweetener

  • 1 T chili sauce

Here’s How:

  1. In a food processor, pulse garlic and pumpkin seeds.

  2. Add Basil and pulse.

  3. Add remaining ingredients and pulse till blended.

  4. Chill and enjoy!
