Tofu Lettuce Wraps
Ingredients:
14 oz firm or extra firm tofu
1 T chopped garlic
1 T grated ginger
1/2 cup diced shallot or onion
1 cup diced mushrooms
1 cup grated raw carrot
1 cup grated raw daikon (optional)
1/2 cup chopped roasted almonds (peanuts more traditional)
1 /t chopped mint
1 1/2 T hoisin sauce
1 1/2 T tamari (soy sauce)
1 T toasted sesame oil
a splash of sriracha, red pepper, or some kind of red hot sauce
Lettuce leaves of your choice ( 12 or so)
Here’s How:
Press tofu to remove excess liquid for a minimum of 30 minutes.
Crumble with a fork and set aside.
Mix hoisin, tamari, oil and hot sauce together and set aside.
Prepare garlic and ginger, onion and mushroom and set aside.
Heat a large skillet, add 1 T high heat tolerant fat (ghee, avocado oil, extra virgin olive oil or coconut oil) and saute onions, then add ginger, then garlic and mushroom and after a few minutes add the tofu and saute for about 5-7 minutes.
Add the sauce, mix, taste, add salt and pepper as needed, and remove from heat.
Grate carrot and daikon, chop nuts, mint and arrange on a platter with whole lettuce leaves.
When tofu mixture is at room temperature, place it in a bowl, add to the platter, and enjoy!
