Turkey Larb Salad
This is a chopped meat salad, originally from Laos, then Thailand. It is easy, fresh and full of flavor!
Ingredients:
1 1/2 lbs of ground turkey
1 T fresh minced garlic
1/2 cup finely chopped red onion or shallots
6-8 cups chopped romaine letturce
3/4 cups chopped cilantro or parsley
1/2 cup chopped fresh mint
1/2 cup slivered almonds or chopped nuts of your choice
Dressing:
1/3 cup fresh lime juice
1/4 cup fish sauce
1-2 T Siracha sauce
2-3 tsp allulose or monk fruit granules
Here’s How:
Make dressing and set aside.
Cook the meat, garlic and onion over medium heat, breaking up the meat as it cooks until slightly browned.
Pour half the dressing over the meat and let cool.
Place romaine and herbs in a big bowl, add meat when at least room temperature, top with rest of dressing, and sprinkle with nuts.
