Hazelnut Dairy Free Bread

This is a lovely quick bread that is dairy free and can be made completely gluten free if desired

Ingredients:

  • ½ cup applesauce

  • 2 eggs

  • ½ cup almond milk

  • 1 tsp vanilla

  • 3 tbsp honey

  • 1/2 cup shredded apple

  • 1 cup spelt flour, or for gluten free, 1/4 cup almond flour, 1/4 cup coconut flour, 1/4 cup Himalayan tartary buckwheat, 1/4 cup brown rice flour

  • 2 tbsp ground flaxseed (optional)

  • 1 tsp baking powder

  • 1 tsp baking soda

  • ½ tbsp cinnamon

  • ½ cup rolled oats (if gluten free, be sure they are processed in strict gluten free standards)

  • 1 tsp sea salt

  • 1/3 cup chopped hazelnuts (or almonds or any preferred nuts)

Here’s How:

  1. Preheat oven to 350.

  2. Prepare a loaf pan by lining with parchment paper or greasing pan.

  3. Using a food processor, place all wet ingredients through the honey into bowl and blend.

  4. Change blade to grater and add 1/2 cup apple, and set aside mixture.

  5. In another bowl, mix all dry ingredients except for the hazelnuts.

  6. Blend wet into dry.

  7. Pour into loaf pan and if you have extra, you can make a muffin or two.

  8. Sprinkle chopped hazelnuts on top and bake loaf for about 25-30 minutes or until done. Muffins will cook in half the time.
