Zucchini Salad, serves 4

Zucchini SaladIngredients:

  • 2-3 zucchini's, spiralized
  • 3 garlic cloves
  • 1/4 minced red onion or 4 green onions, chopped
  • 2/3 cup cup cherry tomatoes, if small, keep whole, if large, slice in half
  • 1/2 cup crumbled sheep's milk feta
  • 3 T olive oil
  • 1-2 T balsamic vinegar
  • sea salt and fresh round pepper to taste
  • 1/4 cup chopped flat leaf parsley
  • 1/2 cup pesto (optional)
  • 1/2 cup roasted nuts or seeds of your choice (chopped almonds, pecans, pumpkin seeds)

Here's How:

  1. Spiralize zucchini into a large bowl and cut every foot so as not to be too long.
  2. Add onion, tomato parsley.
  3. Mix olive oil, vinegar, garlic, salt and pepper and pour over veggies just before serving.
  4. Add pesto if using to dressing.
  5. Top with roasted nuts.

Yummy with grilled anything; ribs, chicken, salmon or any fish, tempeh or tofu!
